Ingredients
  

Sauce Ingredients

  • 3 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp sugar/honey
  • 1 tsp garlic paste / 1 -2 cloves fresh garlic
  • 1 tsp ginger paste or fresh ginger (optional but recommended)
  • 1/2 tbsp rice vinegar
  • 1 tbsp sesame oil (leave out if necessary)
  • 1 tsp Chilli oil - add more if you want a spicier stir fry (optional)
  • 1/2 tsp MSG (optional but highly recommended)
  • 1/2 tbsp cornflour with 1 tbsp water (optional)

Stir Fry Noodle Ingredients

  • 300 g medium egg noodles (pre-cooked/straight to wok)
  • 1 tbsp neutral oil (vegetable or sunflower)
  • 1/2 a large brown onion (sliced)
  • 130 g carrot (thinly sliced)
  • 130 g broccoli (chopped)
  • 100 g cabbage (shredded)
  • Optional vegetables: peppers, mushrooms, spinach
  • Optional protein: crispy tofu, chicken, beef, or shrimp

Instructions
 

  • In a small bowl, combine all sauce ingredients. Stir well and set aside.
  • Chop all your veggies and set aside. Be sure to cut them thin, so they cook quickly.
  • Heat a large wok or frying pan over high heat and add oil.
  • Season the meat or tofu with salt and pepper and fry until cooked through. Remove and set aside.
  • Add onion, carrot, broccoli, and cabbage. Stir-fry for 2–3 minutes until just tender but still crisp.
  • Add egg noodles directly to the pan, loosening them gently.
  • Pour in the prepared sauce and toss everything together until the noodles are evenly coated.
  • Return protein to the pan (if using). Stir-fry for another 1–2 minutes until noodles are heated through.
  • Serve immediately and enjoy your homemade stir-fry noodles.

Notes

Tips
 
  1. If you want spicier noodles, add some fresh chillies, chilli flakes or more chilli oil
  2. Add another tablespoon of honey or sugar for a sweeter sauce.
  3. For saucier noodles, double the sauce ingredients
  4. For gluten-free stir fry noodles, swap out the sauce ingredients and noodles for gluten-free options.
