In a small bowl, combine all sauce ingredients. Stir well and set aside.
Chop all your veggies and set aside. Be sure to cut them thin, so they cook quickly.
Heat a large wok or frying pan over high heat and add oil.
Season the meat or tofu with salt and pepper and fry until cooked through. Remove and set aside.
Add onion, carrot, broccoli, and cabbage. Stir-fry for 2–3 minutes until just tender but still crisp.
Add egg noodles directly to the pan, loosening them gently.
Pour in the prepared sauce and toss everything together until the noodles are evenly coated.
Return protein to the pan (if using). Stir-fry for another 1–2 minutes until noodles are heated through.
Serve immediately and enjoy your homemade stir-fry noodles.
