Ingredients
  

Pancake Batter

  • 2 ripe bananas
  • 2 large eggs
  • 2/3 cup oat flour (swap for blended oats or plain flour)

Optional Additions

  • 1 tsp baking powder (recommended for fluffier pancakes)
  • ½ tsp cinnamon
  • ½ tsp vanilla essence
  • chocolate chips

Toppings

  • Strawberries
  • Sliced bananas
  • Syrup
  • Yoghurt
  • Nuts

Instructions
 

  • Add bananas and eggs to a blender. Blend until completely smooth, then transfer to a bowl.
  • Mix in oat flour and optional baking powder.
  • Heat a non-stick pan or skillet over medium-low heat. Lightly grease with butter or oil.
  • Pour small amounts of batter into the pan (Top with chocolate chips if using). Cook for 1 - 2 minutes until bubbles form on the surface.
  • Flip carefully and cook for another 1–2 minutes until golden and cooked through.
  • Stack your banana pancakes, add your favourite toppings, and enjoy!
