- 1 banana
- 1 egg
- 1/2 cup flour (2/3 cup oat flour for added protein)
- 1/2 tsp baking powder for oats (1tsp for flour)
- 1/2 cup Greek yogurt (strained is higher in protein)
Add bananas to a bowl and mash until smooth.
Whisk in the eggs and Greek yoghurt until well combined.
Add oats (or flour) and baking powder. Mix until a thick batter forms.
If using oats, you can blend the batter for a smoother texture.
Heat a non-stick pan over medium heat and lightly grease.
Spoon batter into the pan to form pancakes.
Cook for 2–3 minutes per side, or until golden and cooked through.
Serve warm with your favourite toppings.
